When you put it in your mouth, the sweetness and umami will pop up around the acidity! The umami slowly swells from there. It is very rich. However, the aftertaste gently and softly melts away. It is delicious.
It's not Ghibli, but if I were to use an analogy, I'd say it's like Takewakamaru, the main character in "Awamino Umi: When the Surface of the Water Sways. This is the childhood of the future warlord Kutsuki Mototsuna.
Well, most of you probably don't know that. It's a story about a weak lord of Omi Takashima, where this sake brewery is located, and his rise to power in the Warring States period. The original novel is good, and the manga version drawn by Motomura Eri is also very interesting. It's a so-called reincarnation story, and Takewakamaru looks young, but he's brilliant and cunning. Rather, he is cunning. He's the type who rises to power with his intellect.
