<Gentle, clean, umami acidity.
This is a sake from Hakurei Shuzo, which I enjoyed drinking Hakurei vivid before. They say it's called "Hyotan karakoma" because they made an unexpectedly good sake by using uncommon rice. Interesting!
The aroma is a beautiful lactic acid.
It has a gentle sourness on the palate, and it comes in slowly. There is almost no sweetness. The sourness recedes quickly, and the rice flavor comes out from behind it. In the end, it disappears softly and is refreshing.
The alcohol content is low at 14%. I wonder if this is the reason for its gentleness. But it is not lacking. Even though it's mainly sour, it's not harsh, and it's not sweet, but it's gentle.
It was delicious!
It went really well with the marinated firefly squid with short pasta. The flavor of the firefly squid, the thickness of the olive oil, and the sourness of the marinade complemented the mild sourness of the sake.
If I were to compare it to Ghibli, it would be like Prince Rune from "The Cat Returns". He is a beautiful cat with beautiful fur.
