It has a soft umami taste on the palate, then the acidity cuts through the umami and it finishes with a wonderful sharpness.
I wonder if the sweetness could be a little stronger. 付喪神There was a bottle of Aki-Agarai that I hadn't had yet, so I ordered it. It is a royal Yamagata Masamune🍶.
The aroma is gorgeous and full, reminiscent of melon and ripe pears. It has a mellow and thick mouthfeel. The flavor and richness of the rice wraps around your tongue 😋.
You can drink it with peace of mind. 付喪神The fourth bottle is a collaboration project between Aihara Shuzo, which brews "Amego no Tsuki" and Mochizuki Shoten in Chiba Prefecture🍶 I heard that yellow and green were newly added from this 2025, so this white label is the basic one?
Pale and clear color with a fruity aroma reminiscent of green apples and white peaches. Mmmm, it is sweet. The first sip is just as sweet as it should be. After that, moderate acidity and a fresh, lively sensation unique to nama-shu envelopes the tongue, and the taste is light, clear, and calm.
It was a delicious sake, but the sweetness was bothersome. I would like to try a green sake that is more classic. 付喪神The third bottle of the day was the autumn limited edition "Ota-no-Tani" (🍶).
The balance between the rich sweetness derived from the raw material rice "Watanobune" and the acidity that supports it. The harmony of this sweetness and acidity is accompanied by a minerality that fills the mouth with flavor 😋.
The other specs of this sake made me curious 🍶. 付喪神Fuji Taikan, a locally distributed brand that was a favorite of Yokoyama Taikan. It is a new sake. It is the first new sake of R07BY, and it is reminiscent of green apple and young melon.
Fruity aroma reminiscent of green apple and young melon. The rich umami from the Yamada-Nishiki sake is spread out while the fresh acidity of the unpasteurized sake keeps the whole thing tight and light. The lingering finish is short but refreshing, with a hint of sweetness and a pleasant sharpness.
I was reminded once again that dry sake is best with sashimi. 付喪神When I informed him that I would be in Nara from 10/26, an old colleague of mine set it up for me.
I chose "Matsuo Jiman -Re:make-" by Kangiku Meikozo, which brews Sono Kangiku from a variety of local limited edition sake.
The fruity aroma and smooth mouthfeel was followed by a floral spread of concentrated rice flavor and a gentle sweetness.

This sake is not on the menu, but they have Shinmasa. I don't like it very much to begin with, but I chose it because it is a rare H-type sake.

付喪神Whenever I go back to Nara, my friend always arranges a table for me 🍶 I chose an imported Otters sake for the first bottle. This one is Type 50, a Junmai Daiginjo with the specs of Yamadanishiki. The rice is Japanese.
It is a clear sake. It is also low in alcohol, so it is light and easy to drink. I think Americans would drink it in large gulps.

This sake Otters🤭 was a delicious sake. Now it is Yamada Nishiki from Japan, but they started growing Yamada Nishiki in the US. I am looking forward to a pure American grown Otter 😊.
