It's bubbly and easy to drink. boukenI found a sake I had never seen before at Takimoto, so I bought this one from among several varieties they had.
There were very few bubbles in the glass. But there was no gassy feeling.
The initial aroma was of rice and a trace of melon. It has a graininess and a trace of sweetness and spiciness. It's more refreshing than I expected. Maybe it is the type that is better served warmed?
The bitterness and astringency seem to stay in the mouth for a long time.
I think it's better to drink it a little later than when it's fresh out of the fridge.
It's basically dry, but not the type I don't like.
It's great with food.
It is easier to drink after a few days as the bitterness becomes less pronounced.

It was quiet when I opened it, but when I stirred it, it almost sputtered. It is dry with strong gas. The sweetness comes first, but the bitterness is stronger. It has a solid rice flavor. boukenIt is said to be the sake that helped Toyobai become a nationwide success. This is my second visit to Toyobai itself after a long absence.
The rice is Hanafukuyuki, and it is an unfiltered, unpasteurized sake.
The aroma is mild, but there is a sweet atmosphere. It is fresh and has a strong sweetness from the rice. The mouthfeel is clean and light.
It may not be because it is an Aomori sake, but it also has an apple-like sweetness. The second half of the bottle has a crisp, alcoholic taste.
