Mouthfeel is mellow and a bit mellow, but after rolling around in the mouth and finishing it off, it feels like a refreshing dry sake 😋.

Sake brewed with a mixed brewing method using multiple varieties of rice.
Dewa Sanzu 77%, Polishing ratio 60%, ALC 15%.
The second cup of the day😄.
It was a dry sake with a moderate scent of ginjo aroma and a tangy taste on the palate 🤗.
It goes well with the "Octopus nishikigi" (thin slices of octopus and plenty of condiments with wasabi) that we had as a side dish 😋.

It had been a month and a half since SAKE Toto opened earlier, from 3:00 p.m. We took advantage of the happy hour, which ends at 5:00 p.m., and entered the restaurant hoping to encounter our first sake encounter 🥰.
First, we chose Tamitsu for our first drink of the day😄.
It has a subtle ginjo aroma and feels slightly sweet.
It is a sake that also has a slight bitterness and fruity aroma when rolling around in the mouth 😋.
I will check the brands and sake types on the wall on the app as I drink and have my first encounter with a sake 🤗.

I had no idea that mizu-hashiro is also called "Bodai-moto", a sake making method developed in medieval Japan.
Bodai-moto is a method of producing sour water called "Soyashimizu" and using that sour water to grow sake mother 🥸.
I think the difference is probably due to the different method of growing the sake mother, but it has a slightly peculiar taste🤨.
I also felt the sake had a strong acidity. I think it has a strong acidity.
Maybe if you taste it with warmed sake, the corners will be removed and the taste will change to mellower 😃.

My first Nanamizu was a Kijoshu, a very sweet sake, so I was very nervous to try the Junmai Ginjoshu 😄.
Slightly sweet aroma, green apple, pear 😅.
I haven't eaten green apple🍏, pear🍐, pineapple🍍, banana🍌, etc. lately, so maybe I don't know the difference in aroma and taste anymore😁.
The taste is a bit slow or mellow...I felt more fullness than sharpness.
The aftertaste is smooth and delicious 🥰.

This is a slightly sweet sake with a delightful nama-genshu shuwashu sensation.
It is a perfect summer sake.

Unfiltered raw sake, unpolished rice ratio not disclosed, ALC 13%.
Slightly sweet sake with a hint of malted rice aroma and orange flavor in the mouth as the name suggests 😘.
It has low alcohol content, so you can drink it as a summer sake 🥰.

It is a dry and crisp sake with a subtle fruity aroma and moderate acidity and umami in the mouth 😘.
It easily washed away the spiciness of the [octopus nishigi-gi] we were having as a side dish 😋.
After the Mitomiku, it feels even more refreshing 💦.

Summer Junmai Nigori Sake brewed with Yamahai

When the master brought a bottle to me, I was so shocked that I couldn't help but exclaim, "What's that? I was so shocked that I couldn't help but shout "What's that?
I was expecting a refreshing ogara-mi to slightly darker nigori sake from the brand name "Mitomiku" and the "Summer Goldfish Label Nigori Sake" 😅.
As soon as it was poured into the glass, it looked like a sloppy dobrok. For a moment, I thought it was not at the level of nigori sake 🧐.
But when I drank it, it was surprisingly a clear, refreshing sake with an acidic, non-greasy taste 😋.
The gap between the brand name and the prettiness of the label is huge 🥳.
