Summer Sake Yamahai Junmai⭐️⭐️⭐️ 100% Miyamanishiki produced in Akita Rice polishing ratio 60%, ALC 14%, Sake degree -8, Acidity 1.9 It was a mild, low-alcohol, sweet sake while retaining the richness of Yamahai 😆. Personally, I felt that Yamahai sake was a bit heavy for a summer sake and I chose a sweet sake for my closing sake, so I gave it 3 stars based on my personal preference 😅. Chigasaki Toto:20230810 It is the oldest sake brewery in Tohoku and the third in Japan. It was founded in 1487, the first year of Chokyo, during the Muromachi period. Three years later, the 8th Shogun, Ashikaga Yoshimasa, built Ginkakuji Temple in Higashiyama, Kyoto. The current head of the family is the twenty-sixth generation. It is amazing 🧐.

Carnimaru Gohyakumangoku 100%⭐️⭐️⭐️⭐️ Light cloudy, unfiltered, unpasteurized sake, no specific name listed Polishing ratio 55%, ALC 16.5 degrees, Yeast: Tochigi yeast T-ND Fourth glass today😄. I couldn't feel the carbonation (slight fizziness) characteristic of nama-shu since there's only 1/3 of it left after opening the bottle 🥹. However, I can taste a slight bitterness and sourness, and I think it is a light cloudy but crisp and slightly dry sake 😋. It was a dry sake with a moderate scent of ginjo aroma and a tangy taste on the palate 🤗. Tabika Junmai Ginjo⭐️⭐️⭐️⭐️ Kiu: 100% Hachitan-Nishiki from Hiroshima Prefecture Polishing ratio 60%, ALC 15 degrees It had been a month and a half since SAKE Toto opened earlier, from 3:00 p.m. We took advantage of the happy hour, which ends at 5:00 p.m., and entered the restaurant hoping to encounter our first sake encounter 🥰. First, we chose Tamitsu for our first drink of the day😄. It has a subtle ginjo aroma and feels slightly sweet. It is a sake that also has a slight bitterness and fruity aroma when rolling around in the mouth 😋.
