A sake with a good balance of acidity and bitterness that one never gets tired of drinking. My friend who attended the party praised it highly, saying it was the best sake he had ever tasted. Is it the power of Ippozumi that we can taste the flavor of rice so well? This is finally the second sake using Ichihodzumi that we have encountered. Okuroku Special Junmai Sake ⭐️⭐️⭐️⭐️ 100% Gin Ginga Polishing ratio 69%, ALC 15 degrees It had been about 4 months since my last visit to SAKE Toto in early August 😅😱😱. It's been a long time since I've been here, and I've met some new brands for the first time, so I'm very excited 🤗. Today, we started with the first brand that we met for the first time, "Okuroku". It is a junmai (pure rice) sake with a rich aroma and a slightly dry taste in the mouth. Junmai Unfiltered Hon Nama Sake ⭐️⭐️⭐️⭐️ 100% Kame-no-o from Hanamaki Rice polishing ratio 65%, ALC 19 Sake degree +9.0, Acidity 2.0 Tonight, too, we encountered new brands and varieties of sake, and we are getting drunk. Junmai Nama-nama Sake Shiboritate⭐️⭐️⭐️⭐️ Rice Polishing Ratio: 50% for Koji rice, 60% for Kake rice Rice used: 25% Yamadanishiki, 75% Gohyakumangoku ALC 18-19 degrees There is almost no aroma. In the mouth, there is not much of the carbonation and tongue stimulation characteristic of nama sake, and a slight lactic acid flavor can be felt. It is a gentle sake with a mild taste. Junmai-ginjo orikigarami nama-shu⭐️⭐️⭐️⭐️ Rice: 100% Yumenishiki produced in Hyogo Prefecture Rice malted Rice: 100% Yamadanishiki from Hyogo Prefecture Rice polishing ratio 55%, ALC 17 It has a slight refreshing aroma, which is typical of Junmai Ginjo, but it is a firm dry sake in the mouth! Summer Sake Yamahai Junmai⭐️⭐️⭐️ 100% Miyamanishiki produced in Akita Rice polishing ratio 60%, ALC 14%, Sake degree -8, Acidity 1.9 It was a mild, low-alcohol, sweet sake while retaining the richness of Yamahai 😆. Personally, I felt that Yamahai sake was a bit heavy for a summer sake and I chose a sweet sake for my closing sake, so I gave it 3 stars based on my personal preference 😅. Chigasaki Toto:20230810 It is the oldest sake brewery in Tohoku and the third in Japan. It was founded in 1487, the first year of Chokyo, during the Muromachi period. Three years later, the 8th Shogun, Ashikaga Yoshimasa, built Ginkakuji Temple in Higashiyama, Kyoto. The current head of the family is the twenty-sixth generation. It is amazing 🧐.

It has a subtle aroma and is a refreshingly light and dry type of sake 😋. I added a side dish...bonito tataki with salsa...it was a very peculiar side dish but this sake made my mouth water 😆. It has a subtle aroma and a dry, crisp taste on the palate 😋. Carnimaru Gohyakumangoku 100%⭐️⭐️⭐️⭐️ Light cloudy, unfiltered, unpasteurized sake, no specific name listed Polishing ratio 55%, ALC 16.5 degrees, Yeast: Tochigi yeast T-ND Fourth glass today😄. I couldn't feel the carbonation (slight fizziness) characteristic of nama-shu since there's only 1/3 of it left after opening the bottle 🥹. However, I can taste a slight bitterness and sourness, and I think it is a light cloudy but crisp and slightly dry sake 😋. I was attracted by the name "Wakakoma Carny Horse" and couldn't help ordering it 🤗. Chigasaki Toto:20230810
