This is a Junmai Daiginjo from the popular Kameizumi CELL-24. The Junmai Ginjo is a raw sake, but the Daiginjo seems to be fire-aged. The flavor is still the same, with a strong pineapple aroma. The sweetness seems to be less pronounced than the Junmai Ginjo.
What's the aroma?
It has a light sourness, bitterness and alcohol taste in the mouth. The sourness and bitterness are more dominant than the sweetness. The bitterness remains in the aftertaste. Hmmm. It's a pity.
I haven't had it yet, so this is just an introduction.
The best rice for sake brewing "Yamada Nishiki from Hyogo prefecture special A district" is polished to 23%.
By storing it under the freezing point for one year, it has a mellowness added to the elegance.
It is the hittogochi of Shinshu Kamehameha.
It has a fruity aroma and is light and refreshing in the mouth. It has a light sweetness and a crisp taste. There is a slight bitterness at the end, but it is not unpleasant. It is very tasty.

The dry and elegant taste is good as a sake for a meal, but it is hard for me who doesn't like dry sake before a meal. White "ori" is dancing in the bottle.

I had high hopes for this because I love Aizan, but I was a little disappointed with the taste.
