This is a light nigori sake that is available only by reservation. It will be released in March 2010. Specifications are undisclosed. We would like you to taste and enjoy this bottle with your own tongue and body, not the specifications. The aroma is modest, and the first thing that comes to your mind when you taste it is "nihongori". The aroma is subdued, and when you put it in your mouth, you will first taste the acidity on your tongue. Next comes bitterness and sweetness, and the bitterness remains.

This is Houou Mita's "Tsubububu Mikan". I had wanted to drink it for a long time and finally bought it, but I missed drinking it and finally opened the bottle today. The label on the back says that it has an expiration date of 3 months from the date of manufacture. I wondered if it's OK, since it's a year old. The color is fine, though. It's like a citrus juice. But I can't tell if the aroma is right or not. I don't know.

This is a sparkling Shichibonspear. First of all, it is second fermentation in the bottle, so if you open it all at once, it will spew out a lot. You have to repeat the process of opening, closing, opening and closing again. The taste is delicious with sourness and acidity. It has a light sweetness and acidity, and the alcohol content is 7 degrees, so it is a tasty juice. 350ml, so you can finish it in one go. It is an expensive shochu liqueur. This is already my 6th bottle this summer.

This is awaibuki, a sparkling sake from the second fermentation in bottle of Nanabonjari. We purchased two bottles from our favorite liquor store. It is a low-alcohol (7%), sweet-sour, fizzy sake. It is not a typical Shichibonjari sake, but it tastes great! But it tastes great! It is 350 ml, so I finish it in one go.

Wakanami Shuzo's 100th anniversary special brew. Wakaba Junmai Sake 100th Anniversary Special Brewing The rice is polished to 73% and the alcohol is 15%. The aroma is subdued. The first taste on the palate is sourness. It is light, and the bitterness comes at the end, but it quickly wears off. It lacks a bit of umami and richness. It is a bit warm rather than cold. It tastes better when it is slightly lukewarm than when it is cold.

Second fermentation in the bottle produces fine, refreshing bubbles from live yeast. Because it is a naturally occurring gas, the quality of the bubbles is finer and lasts longer than artificially injected carbon dioxide gas. Be careful not to blow out the bottle when opening. Open and close the bottle repeatedly, opening the bottle little by little. How about "Japanese Champagne" as a toast, dessert drink, or a dining sake?
