It seems to be similar to one of Terada Honke's!

Gozenshu Omachi Trilogy Series - Yeast Version
Special brewing sake [77] high malic acid producing yeast
When I visited Katsuyama a few years ago, there happened to be a brewery (or maybe community?) festival going on. I had a lot of fun tasting the various samples at Tsuji Honten.
In addition to the nostalgic memories, I also remember that "Yeast No. 77" is the same yeast used by Tobirazumi! So I chose this one🍎.

Hmmm? The taste is different from the previous AFS.... The acidity is excellent, but it tastes like rubbing alcohol (ethanol?) in wine sometimes. It tastes like rubbing alcohol (ethanol?).
