It is extremely delicious. Although it is a junmai daiginjo, it is neither too sweet nor too strong in aroma, so it does not disturb you even if you drink it during a meal, and it is well-balanced anyway.
I feel like it is getting more and more flavorful as the bottle is opened and the days go by. I feel like the lightness I felt at first is turning into umami.
I was worried about how it would taste since I bought it at a home coop, but it is very good. It's an old sake but easy to drink, and yet you can enjoy the thickening and sweetness that is typical of old sake to the fullest.
This one was made with rice from my favorite Matsu no Tsukasa, Hashimoto, Ryuoh town. I knew it would be absolutely delicious because of the story alone, but it was great. I paired it with funazushi, so there is absolutely no doubt about it... this...

It's called Hyakusaiji Taru, a sake from Hyakusaiji Temple, which has been revived after 444 years. It even seems to be filled with the romance of the Warring States period. It was so delicious that I drank too much. It was just so easy to drink.

I personally think that most sake breweries in Hokkaido have a light but fruity flavor, but this one from Nakatsugawa also has a strange Hokkaido taste. The yeast-free fast brewing may be a touchstone to see what kind of yeast has settled in the new brewery, but it has a definite Hokkaido taste! I'll drink another one!

I don't have to tell you, it's the most delicious. It has a fruity yet firm flavor and volume that is typical of Kuheiji. The expression changes little by little depending on the temperature and the passage of time after opening the bottle. I love its depth and nostalgia. Thank you very much!
