Junmai Daiginjo made with contract-cultivated sake rice and Chokaisan natural water, so as the name suggests, it has only a clean taste. It is a sake that is smooth on the palate and has a full-bodied flavor that can be enjoyed with or without any accompaniments. Thank you very much for the sake.

It has a slightly strong alcohol taste at 17.5 degrees Celsius, but as one would expect from a Daiginjo, it also has a mellow and fragrant aroma in the mouth. I received this sake from a relative in Niigata. High-spec sake like this may only be available in department stores in the Tokyo metropolitan area. It may be a bit strong for sake beginners. When you put the boar's mouth close to your mouth, you first smell the gorgeous aroma of daiginjo. It goes down your throat gently and you can continue drinking as much as you like. When served with snacks, it has a light sweetness that makes it perfect as a food sake. Today, I bought sashimi at my favorite fresh fish store. I enjoyed the golden combination. Thank you very much.

I had this sake in my closet, and I thought it would be nice to have it warmed up in the cold weather. I started with lukewarm sake, which was the right choice for me, and I could taste the aroma of the barrels. I enjoyed the raw oysters and amberjack sashimi as snacks. We were sent the New Year's Day Shibori again this year. I think the freshly squeezed taste and the firm rice flavor are quintessential Asahiyama Shuzo. Today we had pork and Chinese cabbage 🥬 hot pot and enjoyed both very much.

This junmai nama-zake was given to me by a relative in Nagaoka. It is very delicious with a light mouthfeel and gorgeous aroma. The freshness of the slightly light nigoromi (slight runny taste) is typical of a freshly pressed sake. I enjoyed it with salmon fillet and horse sashimi, which I received from a relative, and finished the four-pack, which made me feel a bit sorry for myself. We first had it cold, and it has a very good balance of sharpness and flavor, with a mouthfeel that is truly Yamada-Nishiki. It has a strong rice flavor and would go well with all kinds of snacks. It is brewed with 100% Yamada-Nishiki produced in Mie Prefecture, but I had never heard that Yamada-Nishiki is cultivated in Mie Prefecture. It is a delicious sake that can be drunk anywhere.

When you bring the sipper to your mouth, the first thing you notice is the fruity and mellow aroma. When you put it in your mouth, you will feel the light shwash feeling of a fresh, direct saké, and it is a little crisp on the throat. Today's accompaniment was sashimi from a favorite restaurant, but I thought that slightly fatty fish would go better with this sake. The next day, the saké lost its "shuwashu" feeling, but it became a good combination of mellowness and drinkability. I enjoyed it very much.
