This is a sake called "46" from the Yosamusume Sake Brewery in Kyoto. The name "46" is pronounced "Yosamusume. The suitable rice is Koshihikari produced in Yosanomachi. It is labeled as a bottle-fired sake. Normally, it would be labeled as a freshly stored sake... The alcohol content is slightly high at 16 degrees, and the taste is rich and dry. It is a pity that there is still a little bit of a tangy taste, but it is very tasty and full of flavor. It is a sake that you might want to drink alone quietly in indirect lighting.

Because the yeast is still alive, it has a fizzy but clean taste. Although it is a pure sake, the alcohol content is not high at 14 degrees. The aroma is fruity and reserved. The taste is robust, but the mouthfeel is soft and easy to drink. It is made with 20% Yamada-Nishiki rice and the premium rice is a rare variety called "Nikkomaru" from Nagasaki Prefecture, but it received the highest rank of "Special A" in the "2023 Rice Taste Ranking" conducted by the Japan Grain Inspection Association. The aroma of the rice is distinct, so the evaluation may be divided, but I personally like the aroma. This sake has a "friend who has been visiting for a long time" feel to it.

It is a limited edition sake that can be said to be a representative sake of Houraizumi, and is said to be a fantastic limited edition sake. When you put it in your mouth, the aroma passes through your nose and spreads to your mouth at the same time. It does not unnecessarily stimulate the throat, so even weak drinkers can enjoy it, and if you like alcohol, you can drink it with even more flavor. The downside... it is a little too expensive...

The preferred rice is Gohyakumangoku. It has a wonderful clear flavor with no cloying taste, but it is a little sweet, so it may be a good choice for a meal as a mid-meal sake. The aroma that spreads smoothly in the mouth gives the impression of refined production, but the sweetness remains, so it is not suitable for those who like dry sake.

The preferred rice is 100% Miyamanishiki (produced by Tenju Sake Rice Research Association). It has a clear and gorgeous aroma and taste, yet has a moderately dry mouthfeel, making it ideal for Japanese cuisine. It is highly recommended for those who wish otters were a little drier.

A famous sake from Shiga Prefecture, Sanrenboshi. It feels somewhat sweet, but the sake has a Sake meter value of +2.7. It may seem sweet because of its high amino acid content, but it is aromatic and full of flavor. The film in the photo is a UV-blocking film. It is actually wavelengths below 450nm that degrade sake (due to its higher damage coefficient), so even if you block only UV rays, it will still degrade, but this sake is not degraded and tastes great. Recommendation!

The aroma is wonderful, spreading to the back of the throat as soon as it enters the mouth. The brewer's rice is Yatan 35. Yatan 35 is Hiroshima Prefecture's representative rice suitable for sake brewing. It is said to have inherited the lineage of "Yatanso," a fantastic rice that was once a native species, and was created by crossing "Yatan No. 10" and "Shuho. It is softer than Hachitan-nishiki, and although it sometimes breaks up during milling, it absorbs water well and is easily soluble. It is characterized by a fine, clear flavor and a lustrous aroma, and it produces a smooth, light sake with a pleasant mouthfeel. As one would expect from the Aihara Sake Brewery. It is finished just as it should be. There is no miscellaneous taste at all!

I think the label says it all: "gorgeous aroma and sharp, dry taste." It has a mellow feeling, however. However, if the sharpness of the aroma is described as dry, then it could be called a dry taste. But would a sake lover describe it as dry? We would like you to taste and try it for yourself.

This is a sparkling unpasteurized sake that Tazake offers only in the summer. When poured into a glass, fine bubbles start to rise vigorously and quickly disappear, but when you drink it, the sparkling wine-like effervescence remains. With a sake level of -1.5, it may seem a little sweet, but the solid mouthfeel that remains can be said to be that of Tasake. No-pressure pressing is a method of squeezing without applying pressure during the pressing process. Does this change the taste? I don't know because I haven't tried the same thing machine pressed or not, but is that why it has a softer mouthfeel? The amino acid content is not listed, but I assume it is high. It feels sweet, but probably due to the high amino acid content. Overall, this is good! I wonder how to describe this flavor that could be mistaken for sweetness. Anyone, please let me know.

This sake is made with Koshihikari rice produced in Tango and miyamizu (miyamizu is "playful stone water"), which is a sake made in pursuit of the Kyotango style. This is a very particular sake with a soliloquy written by the brewery's head brewer, Toji Kakiki. It was produced in December 2022 and kept refrigerated to keep it out of the sun. It has a nice mouthfeel, although the taste of old sake is a bit of a concern. It was also refrigerated at the liquor store, but it may have received UV light before that. So what I drank was...disappointing!

Since the rice polishing ratio is 50%, it may be originally labeled as a daiginjo. That is why it tastes clear and free of any cloying flavors. It is a sake that has both a pleasant mouthfeel and a solid drinking experience. It has a sweet mouthfeel, but the lingering taste is dry, so you will find yourself pouring more and more sake.

It is a light pink cloudy sake reminiscent of cherry blossoms in spring, and its name is Harukoi. It may be called Harukoi because of its sweet and sour taste. It is brewed with Hitomebore with red yeast, as if it was made with a focus on "love. It is a junmai ginjo without any cloying taste, and although it is not suitable as a food sake because of its low sake content, it is a light and delicious drink.

This sake is a limited edition from Kamotsuru brewery in Saijo, Hiroshima, made from Hirokei Sanjusan rice suitable for sake brewing. It has a wonderful aroma and lingering aftertaste that spreads from mouth to nose like a fine brandy in the mouth. The texture is a little tender on the tongue, but it is not sweet, and the strange flavor, with its gusto and clear taste, is unparalleled. It is a good finish. If I were to use an analogy, it is like looking at the sea between the sunset and the sunset in the Seto Inland Sea.

Sake from Hita City, Oita Prefecture. The city was the domain of the Edo Shogunate, and water called Tenryosui is sold here. This sake is made from that water. It was brewed in October 2010 and kept refrigerated, but it has a slightly old sake aroma, which may be liked or disliked.

 This sake is made by Chiyomusubi Sake Brewery, located at the entrance to Mizuki Shigeru Road from Sakaiminato Station. The design depicts a slightly mischievous Kitaro, but the taste is a serious sake with a firm mouthfeel.  Even the yokai that scared me as a child seemed cute compared to a country that launches missiles all over the place.

 This Yamaguchi Prefecture sake is named after Yoshida Shoin, who opened the Matsushita Village School. It has a light but firm flavor with an elegant aroma that comes afterwards.  On the label, there is a phrase by Yoshida Shoin: "Even if my body will decay in the fields of Musashi, I will hold on to my Yamato spirit.  The label also includes a phrase by Yoshida Shoin, "I will hold on to my Yamato spirit even if it rots in the fields of Musashi. Although the meaning is slightly different, I can feel in this fragrance today's game (December 2), in which the Samurai Japan, who lost against Costa Rica, fought fair and square against Spain, which was seen as an overwhelming disadvantage, and led them to victory.  In English, Yamato spirit is "the Japanese spirit" and samurai spirit is Bushido. Both are beautiful Japanese spirit, which can be seen in the actions of the supporters who leave no trash in the stadium. Yoshida Shoin also has a phrase like this. "If you do something, you know it will happen, but you cannot help it, the Yamato spirit.  This sake can be enjoyed with the Yamato spirit in mind.

The brewer is Meiju Shuzo Co. The brewery is located in Hohoku-cho, Shimonoseki City, Yamaguchi Prefecture. The Kakushima Ohashi Bridge, which gives this sake its name, spans Kakushima Island in the northern part of Yamaguchi Prefecture and offers a spectacular view. The taste is rich and mild. Unfortunately, the autumn rise in November 2022 leaves it a bit bland. We have added a bridge over Kakunoshima Island to the photo. Personally, I think it would be better to make a lighter finish for the image of this bridge over the emerald green sea, which is not unlike Japan, but considering that it is only sold in this region, it has a quaint flavor that overlaps with the image of the beautiful sea. This is definitely a place to visit when visiting Yamaguchi Prefecture.
