This sake is made with Koshihikari rice produced in Tango and miyamizu (miyamizu is "playful stone water"), which is a sake made in pursuit of the Kyotango style.
This is a very particular sake with a soliloquy written by the brewery's head brewer, Toji Kakiki.
It was produced in December 2022 and kept refrigerated to keep it out of the sun. It has a nice mouthfeel, although the taste of old sake is a bit of a concern.
It was also refrigerated at the liquor store, but it may have received UV light before that.
So what I drank was...disappointing!
