The brewer's rice is Yatan 35.
Yatan 35 is Hiroshima Prefecture's representative rice suitable for sake brewing. It is said to have inherited the lineage of "Yatanso," a fantastic rice that was once a native species, and was created by crossing "Yatan No. 10" and "Shuho.
It is softer than Hachitan-nishiki, and although it sometimes breaks up during milling, it absorbs water well and is easily soluble.
It is characterized by a fine, clear flavor and a lustrous aroma, and it produces a smooth, light sake with a pleasant mouthfeel.
As one would expect from the Aihara Sake Brewery. It is finished just as it should be.
There is no miscellaneous taste at all!
