The alcohol content is between 19% and 20%. Sake yeast is the best in the world, and it is possible to make sake with more than 20% alcohol. However, Japanese people are said to get white patches on their throats if the alcohol content is over 20%, so this is just barely possible. It is a wonder that they have managed to adjust the alcohol content well by using nama sake.

Wine, Shaoxing sake, and makgeolli become inactive with the alcohol they produce at less than 16%, but sake can go above that. If it exceeds this level, it is usually diluted with water and is fire-quenched for sterilization and to stop yeast bacteria.

This sake is made by Kamoizumi in Saijo, Hiroshima. It is only sold at the brewery, so we obtained it locally. It is a clear sipper with 100% Yamadanishiki from Hiroshima and 50% polished rice. The ginjo aroma on the nose when it hits the palate is sweet, but it is followed by a firm, uncluttered, dry aftertaste. It would be interesting to drink it with a wide or narrow-mouthed boar's mouth to feel the difference in flavor.

This is a high alcohol (18.5ºC) junmai nama sake brewed in Shimanto Town, Tosa. It does not have much aromatic flavor, but its unique gustatory sensation reminds one of Tosa's igosso. It is a perfect match when drunk with ginger. I think. (There may be pros and cons...) It is the perfect sake for forgetting unpleasant things.

It is more of a mature sake than a mellow sake, with a firm dry taste and aromatic aroma. This sake is produced in small quantities in Gojo City at the foot of Mount Kongo, using water from the Kongo mountain range and handmade in the Tajima style. It is a sake produced in small quantities using Nara's unique and suitable rice, "Rohafu". The brand name "Goshin" is said to be a combination of the character for "god" (sake has been served to gods since ancient times) and the character for "go" (Gojo City, where the sake is produced). The word "mahoroba" is an archaic word for paradise or an ideal world, and is said to have been coined in the Kojiki (Records of Ancient Matters) as "Yamato wa kuni no mahoroba tautanazuku aogaki yama komineru wa shiuruhashi" ("Yamato is the country of mahoroba").

This is a junmai sake from the Mifukyu Shuzo brewery in Shiga Prefecture. It has a dry, rich, and robust taste, but also has a light and pleasant flavor. As for the sake cup, a lacquered wooden cup is good, and although it may seem contradictory, a thin glass cup is also good.

This sake is made from Tsuyuubakaze, the only suitable rice in Nara Prefecture. It has a full-bodied ginjo aroma that is different from the soft ginjo aroma of a daiginjo made with Yamada-Nishiki. It feels sweet on the palate, but has a firm aftertaste.

It is 75% Omachi and 25% Yamadanishiki. Although the rice polishing ratio is 55%, it is unfortunate that a little bit of miscellaneous taste remains. The ginjo aroma is restrained and the flavor of Omachi is strong.
