Yu" means gentle in Chinese characters.
It is a gentle junmai-shu with an alcohol content of 13%, made with the help of lactic acid bacteria that live in the natural world. It is characterized by a gentle sweetness and fresh acidity.
The rice is "Ishikawamon", a sake rice from Ishikawa.
The yeast is "Kanazawa yeast" which was discovered in Ishikawa.
The brewing method is "Yamahai-zukuri", which is the specialty of Noto Toji, a master brewer in Ishikawa.
This is a new style of tradition made from local ingredients and techniques.
In order to express the perfect terroir, no additives are added except for the yeast, resulting in a natural taste.
