This sake is made entirely from "Koshitanrei" rice grown locally in Niigata City under contract.
It has an elegant sweetness and acidity, as well as a fruity feel. First of all

Limited edition "Bizen Omachi". This is a gem produced in particularly small quantities.
It has a freshly squeezed, elegant and refreshing fruity aroma and taste, and is soft on the palate and pleasant on the throat.

Yuki Shuzo's PB sake
Unknown SPEC, except that it is a draft sake (no record).
But it seems to be one of the few sake with a limited number of bottles.
It must have been good from ⭐️4
The name is Nobi but it's still good 😆.

SPEC unknown (Junmai? Junmai Ginjo?)
Thick taste with a persistent acidity.
This sake may already be gone (I couldn't find a sake with the same label)

Not dry or sweet.
I hear it's fully fermented to eat up all the sugar.
It has a rich aroma, a mild sweetness from the rice, and a clear acidity.

Sanmai Hashii, Junmai Ginjo Premium (Sake rice: Aikoku, Miyamanishiki, Hiyori)
Aromatic and easy to drink ginjo-shu. The sense of bitterness draining away and the tangy acidity lingering on the tongue, but it is refreshing and highly recommended!

This is another one that I was into for a while, Lo-Man.
I've been enjoying the "shimofuri", or "orikagari".
It's so good and stable, isn't it?
