Tonight, we have Sakanishiki, a sake from Kokuteki Shuzo in our hometown of Shimane. When you leave your hometown, you don't get to see it very often. The rice and water are local, and it's all Shimane sake. A beautiful blue bottle. When you open the bottle and pour it into a glass, it is a light amber color. The aroma is not strong, but when you inhale it, you can feel the depth of the aged rice❗️. It's crisp in the mouth, and after a while the taste of the rice fills your mouth. You can't drink it all at once because it has a peculiar taste, but you can enjoy it chibiri chibiri. If you want to drink it at a restaurant, you should have it in the middle of the meal. The sake is carefully handcrafted, and you can feel that this is what sake should taste like. Yes, it's also a local favorite (laughs). Incidentally, the word "Sako" in the name Sakanishiki means that in Shimane there is a shrine called Sako Shrine, which is well known to those in the know, and the area is said to be the birthplace of sake brewing. Sako is the ancient name of sake. Believe it or not... but I'm tasting it with such a romantic feeling❗️.

We visited the famous tempura restaurant "Tenichi" in Osaka, and came across this special label❗️. It is a Junmai Daiginjo with a 40% rice polishing ratio. This is the first time I've had Ryoseki-san. Is it a green apple? It has a fruity and refined taste. It's a pure and pure Junmai Daiginjo that you can feel the carefully polished rice❗️. It's a stylish sake that looks great in a wine glass. There are so many great sake in Akita ️️. It's been more than a year since I stopped visiting my favorite Akita, and I really wanted to drink it there, but recently I haven't had the chance even in Kansai, my home base. But, but, the sake of Akita that I drink after a long time is still the best ^ ^.

The other day, I opened a bottle of sake that was given to me at my favorite bar. It's my favorite brand, Furei from Tottori Prefecture, and it's nigori gara sake. It's sake that has been freshly pressed and bottled without any heat treatment. I opened it slowly, so as not to irritate it... It's alive, you can really feel it! You can feel the sweetness of the rice in the air, and along with the fizzy sensation, you can feel in your mouth that it is in the middle of fermentation right now. It's cloudy, but somehow you don't feel the ori in your mouth. The color is cloudy with a yellowish tinge. The smell is not strong, but you can feel the rice. There is no eggy taste, and you can drink it easily, but you will get drunk. I would like to taste only the sake without the sauce. Sake is really interesting! It's fun! And the rice is amazing!

It has a refreshing ruggedness to it. We drank it hot this time, and you can taste all the flavor at once. It's not a famous brewery, but you should definitely give it a try! I can drink it at my favorite restaurant in Amagasaki City, Hyogo Prefecture. I recommend it to everyone!

Speaking of business trip, local sake! But it was late at night when I arrived, so I gave up. There were no other options but the convenience store, so I looked for some local sake... and this was the only thing I could find. It's been a while, a really long time, since I've had a bottle of "Kasen" sake. In addition to brewing alcohol, it also contains sugar. It brought back memories of my grandfather drinking it at my parents' house... the sticky, medicinal stuff that always lingers the next day. But it's been more than 20 years since then, and the times are different! And Kunimaru is a famous sake! That's why I bought it, even though it was a long time ago. In conclusion, it's completely different from the old days, it's delicious! It's not sticky at all, which I think is a skill of the brewer. It may not have the fullness, aroma, and depth unique to Junmai, but that's a balance with the price. It's nice to be able to drink it easily with the sweets you've bought! It's unexpected in a good way, and I'd love to try Kunimare's other brands! In one of the books, it was written not to shy away from those with brewing alcohol. It says that it is completely different from the old one. I'm sure opinions vary, but I think I'll try to enjoy it without too many preconceived notions!

It's been a while since I drank Tamano Hikari, which is said to be the best in terms of cost. Certainly, you can buy it at convenience stores and supermarkets, the price is reasonable, and it is delicious. It is well balanced and refreshing to drink. Does it have no characteristics? Happy New Year! On the morning of New Year's Day, we drank Kiji Sake Brewery. Or rather, I drank it up yesterday, and this is the only bottle left. We thought we would have a refreshing sake for the New Year's sake, but what we had left was unfiltered sake (lol). We enjoyed the festive season with a sense of mellowness. The cloud is the cloud of Unnan City in Shimane Prefecture, where the Kiji Sake Brewery is located. It is a historical town where the legend of Yamata no Orochi remains. It is a small brewery, but they are carefully brewing sake. It's not flashy, but it's the kind of sake you want to drink while savoring it slowly. I wish you all a very happy new year!

The last drink of 2020 was Awakumo from Kisugi Shuzo. It is a rare junmai sparkling sake. You can feel the sweetness of the rice that only pure rice can provide, but there is also the gorgeousness of the bubbles. I love the moment when you put it in your mouth and keep it there for a little while...feeling the bubbles and then gradually feeling the taste of the rice. It is perfect for celebrations and other special occasions. We had it with soba noodles while watching Red and White. It is very easy to drink, so you need to be careful not to drink too much ^ ^. Limited edition sake with serial number. It's the best ending!

My favorite local brewery, Kiji Shuzo! The name is unique, but it's a solid aged sake (Junmai Ginjo). It's an aged version of the brewery's classic series, and you can enjoy it by comparing both! And the raw rice is 100% Sakanishiki, a Shimane Prefecture original. It is only assumed that there are various theories, but Shimane is said to be the birthplace of Japanese sake. It has the color, smell, and taste of an aged sake. It's not thick and smooth. But you can feel the sweetness of the rice. Even so, it is not strong, so you can enjoy it as a food wine. By the way, I'm enjoying it with Brie cheese now. The other day, I contacted the representative and toji of the brewery, and he told me that sake brewing will start right after the new year. So another new life will be born, I'm looking forward to it! Incidentally, the name comes from Unnan in Unnan City, Shimane Prefecture, where the brewery is located, and also from the title of a movie set in this area. It's a sake from a place with a long history, where the legend of Yamata no Orochi is told!

The shop recommended this sake to me, saying that they had a rare brew. Yes, this was my first time to try it. I was surprised to hear that this sake is being made on a trial basis by Kamikawa Daisetsu Shuzo, so it's not available on the market yet. No wonder I couldn't find the brand name on this app either. It's easy to drink but has a strong taste. It's been a long time since I've encountered a sake that is distinctly Japanese in the midst of the growing number of fruity sake. It's kind of a relief! This was my first time drinking skunk cabbage. It's a sake from Gunma Prefecture. It is a fruity and gentle sake and has a faint ginjo aroma. It has a mellow flavor. Fable Nari Narushige Genshu (Junmai) Another local sake. I have a special place in my heart for this brewery and I love it. It's been a while since I've visited the brewery. Akidashi Ichibanshuu Junmai Sake This is a very stylish design. Autumn leaves are dancing on the whole surface. It has a crisp mouthfeel, no peculiarities and not a bad aftertaste.
