My favorite local brewery, Kiji Shuzo! The name is unique, but it's a solid aged sake (Junmai Ginjo). It's an aged version of the brewery's classic series, and you can enjoy it by comparing both! And the raw rice is 100% Sakanishiki, a Shimane Prefecture original. It is only assumed that there are various theories, but Shimane is said to be the birthplace of Japanese sake. It has the color, smell, and taste of an aged sake. It's not thick and smooth. But you can feel the sweetness of the rice. Even so, it is not strong, so you can enjoy it as a food wine. By the way, I'm enjoying it with Brie cheese now. The other day, I contacted the representative and toji of the brewery, and he told me that sake brewing will start right after the new year. So another new life will be born, I'm looking forward to it! Incidentally, the name comes from Unnan in Unnan City, Shimane Prefecture, where the brewery is located, and also from the title of a movie set in this area. It's a sake from a place with a long history, where the legend of Yamata no Orochi is told!
