Tonight, we have Sakanishiki, a sake from Kokuteki Shuzo in our hometown of Shimane. When you leave your hometown, you don't get to see it very often. The rice and water are local, and it's all Shimane sake. A beautiful blue bottle. When you open the bottle and pour it into a glass, it is a light amber color. The aroma is not strong, but when you inhale it, you can feel the depth of the aged rice❗️. It's crisp in the mouth, and after a while the taste of the rice fills your mouth. You can't drink it all at once because it has a peculiar taste, but you can enjoy it chibiri chibiri. If you want to drink it at a restaurant, you should have it in the middle of the meal. The sake is carefully handcrafted, and you can feel that this is what sake should taste like. Yes, it's also a local favorite (laughs). Incidentally, the word "Sako" in the name Sakanishiki means that in Shimane there is a shrine called Sako Shrine, which is well known to those in the know, and the area is said to be the birthplace of sake brewing. Sako is the ancient name of sake. Believe it or not... but I'm tasting it with such a romantic feeling❗️.
