The aroma is discreet but clear.
Minute effervescence, first impression of sake is light.
Transparent, light umami and sweetness.
From the mid-palate, an astringent pungency appears, and then it gently kicks in with an astringent taste as it goes on. Kamo Kanehide B.B. was associated as a similar sake.
It is a modern light sake with a light center of gravity from start to finish, without the heavy image associated with the word "unfiltered.
Shaking the bottle lightly to release the gassy feeling, the sweetness and astringency appeared earlier, and the flavor structure became easier to understand, but the lightness of the sake remained unchanged.
After the second day, the sweetness increases a little and the fullness appears.
After the second day, when the full-bodied flavor has developed, it becomes quite drinkable even if small ice cubes are floated instead of adding water.
We feel that it does not go well with snacks that are too strong in flavor, so we served it with komatsuna salad with a little bit of additional salt.
