The aroma is discreet but clear.
Minute effervescence, first impression of sake is light.
Transparent, light umami and sweetness.
From the mid-palate, an astringent pungency appears, and then it gently kicks in with an astringent taste as it goes on. Kamo Kanehide B.B. was associated as a similar sake.
It is a modern light sake with a light center of gravity from start to finish, without the heavy image associated with the word "unfiltered.
Shaking the bottle lightly to release the gassy feeling, the sweetness and astringency appeared earlier, and the flavor structure became easier to understand, but the light sake quality remained the same.
After the second day, it becomes a little sweeter and richer.
I feel that it does not go well with snacks that are too rich in flavor, so I served it with komatsuna salad with a little additional salt.
