First Niida Zenshu. Polishing ratio 80, raw yeast. It has a very good sake-like feeling from this rice polishing ratio. Not quite to my taste? I thought it was a bit different from my taste. First of all, the flavor is more fruity than yogurt, which I don't like, and the sake-like feeling is gently enveloped by the umami of the rice, so I hardly notice it. The sake flavor is gently enveloped by the umami of the rice and is hardly noticeable. It is such a wonderful flavor that you can leave it to the umami, which can be described as a bit forced.

Hiyoroshi" is a Oyama hiyaoroshi that we have been drinking since the year before last. The taste is stable. The sweetness at the end is a characteristic of Oyama. It is a beautiful sweetness. Recently, I personally dislike Daisen's special pure sake which is not hiyaoroshi, because it seems to be a little sour. You can buy it by the bottle.

I bought it because I liked the label design. This is my first Shinanonishiki. The price is reasonable for a junmai ginjo hiyaoroshi. Polishing ratio 50%. It is a junmai ginjo without corners and very easy to drink. It has no special characteristics, but that is a good thing. We would like to repeat this season.

The alcohol content is slightly high at 17%. It has a light matured taste, which is typical of hiyaoroshi. The slightly heavy rice flavor and alcohol taste is quite good, but I don't think I can drink a lot of it. You don't have to drink it, though!

Purchased by the bottle. Took a total of 5 days. Day 1: Too acidic? Day 2 to 4 The acidity is pleasant. Tasty. I want more acidity! 5th day: A little alcohol is felt, but the acidity is still good. So, we could enjoy the spread of acidity.

I was looking for a new brand of hiyaoroshi, and the owner recommended it to me. I had often seen Mansaku no Hana at liquor stores, but this was my first time drinking it. It has a slightly sweet, fruity taste, followed by a good sense of alcohol and rice flavor in the aftertaste, with a good cut at the end. There is also a bit of pleasant bitterness when tasted thoroughly on the tongue. Not heavy, but great to enjoy in multiple layers. After finishing the bottle, I made a shocking discovery. The production date was last August. I don't think the taste will deteriorate since it is kept refrigerated, but rather, has it aged further? I'd like to find out!

The first Sentori. Clean flavor and soft acidity. Indeed, immaculate! Pure taste, very polite and gentle. It is delicious. I finished the four-pack bottle. However, something, I want one more flavor. Personally, it could be some sort of miscellaneous taste.

It is dry, but not so dry as to be a "D". Rather, it is characterized by a fruity taste and dryness. This is the effect of the unique yeast. It has a very good characteristic. It is quite different from the general dry taste, where the sweetness of the aftertaste breaks off and the umami of the rice remains. It is not sweet, but the fruity taste remains.

If I were to force myself to replace it with the brand I usually drink, I'd say it's like Tasake's Tokujun with less aroma and aftertaste, and more of a Funaka Hachisaku aftertaste. On the second day, the sweetness was a little more pronounced, and the aftertaste was more mild. The label on the back of the bottle says something like, "Compared to Pure Black, this brand is..." But is this not Pure Black? Is my language skills not good enough?

It is a rare and rare brand. I happened to find it for sale at a sake specialty store on my way home. It is similar to Tasake among the sake brands I have had. It tastes like a more aromatic, elegant, and mellow version of Tasake's special junmai. No wonder it is so popular. I will definitely buy it again when I find it. I would like to try other rice as well.

Yoshi, is a freshly-packaged product. Yoshi has a fruity flavor of Jyusui. This is the third time? Yoshi is more fruity and fresh, but has a mellow aftertaste. If you don't like the aggressiveness of nama-shu, please give it a try.

Comparison of Tasake's special junmai and special junmai yamahai brewing. Both are very easy to drink and delicious, with the richness, umami, and fruity taste of sake, yet you never get tired of drinking them, and if you are not careful you can drink too much. The difference is that the Yamahai is richer and a little less fruity. If you drink the special junmai after the yamahai, you may wonder how fruity it is, but it is not a big difference.

I thought it would have a calm sake feel plus rice flavor since it is a Gobashi tratan, but maybe because it is a nama-shu, it is very fresh and has a shooty taste with a rummy feel. It is delicious and has a seasonal flavor, and I would repeat it, but it seems to be stuck in the category of nama-zake.
