Hirotogawa after a long time. This is the first time for me to drink hiyaoroshi. It has a fruity taste with a good weight and umami, and is very tasty. Perhaps because it is hiyaoroshi, it has more cohesiveness and depth. I drank it slowly over a period of five days, and as the days went by, the sweetness and umami seemed to increase. This is the joy of drinking a bottle of sake.

To our surprise, Kasumi supermarket has started selling Ibaraki Prefecture's local sake as a private brand. The price ranges from 1,000 yen to 1,500 yen. This Raifuku is one of the more expensive ones, at 1,500 yen. It tastes like flowers. The aroma is subdued, but when you put it in your mouth, it has the aroma and taste of flowers. It is gorgeous and nice. I was impressed that such a sake is available at a supermarket.

I was told that it was a limited edition equivalent to Yami Naraku Akimizu, which I was impressed with last year, so I bought a four-pack of it for a little over 2,000 yen. All I can say is that it is delicious. It is a little sweeter than Yami Naru. It has a strong flavor. It is both sweet and refreshing. You should buy it in a bottle!

This is the first time I have tasted a sake made with 70% polished rice called Kojo-nishiki. Compared to the usual Tasake Tokujun, it has a weaker aroma, less floral, more umami from the rice, and a clear, exquisite taste that is not too heavy. I really hope they make this a regular product!

Kudokyuide's Ginjo-shu, with brewing alcohol, obtained through Furusato tax payment. Fruity and crisp, but without alcohol. It has a taste that you would not expect from a low-priced grade. Delicious! If I could buy it anywhere near me, this would be good enough!

Since the end of the year, I have been drinking Tazake Zodiac Bottle, Tazake Yamahai, etc., and now I am back to the basics? I have returned to the basics, special junmai. The special junmai has a gorgeous aroma and taste. You could call it fruity, but there is no fruitiness, just the freshness of the rice. It is still delicious.

I have only had the regular pure rice version of Yukino Kayasha, and I remember it as having a light flavor. This time, it was a draft sake, but it still had a refreshing and clean aroma, restrained sweetness, gentle and mild umami, and a very clean and sharp aftertaste. I drank it cold, and it was quite easy to drink. If it were hi-ire, it might seem too light to me. I think lukewarm heating would be just right.

Junmai Aizu Nakasyo. At room temperature. The sake has a slight alcohol taste, then fruity rice flavor, light sweetness, and a clean aftertaste. It is a sake from Fukushima, but it is like adding a bit of fruity taste to Niigata sake. I was getting a little tired of new and unpasteurized sake, so I found it very tasty. However, when chilled, it lost its sweetness and became pale. Room temperature is recommended!

The first Toyo Bijin. It is a slightly fruity sake with a calm flavor, a refreshing feeling, and a gentle, moderate sweetness, all of which are typical of Yamaguchi. It has a satisfying taste, yet it is not dull at all, so you will never get tired of drinking it. I drank it at a camp where the temperature was almost zero, which is why I gave the above impression, but next time I would like to drink it at home or at a restaurant.

First Hakurakusei. Hiyoroshi. As it is famous for being the ultimate food sake, I expected it to be light in flavor, but However, contrary to my expectations, it has a strong rice flavor and umami. The aftertaste is clean but not at all spicy. It has a clear and sharp umami taste. I felt the umami taste, perhaps because it was aged in hiyaoroshi (cold sake). After drinking about 2 gou of sake, it was difficult to balance the sake with food, perhaps because the snacks were poor, such as canned food, etc. I wanted more acidity or bitterness in the sake itself. I would not have thought so if I had seasonal seafood or other proper snacks. On the second day, I had less than two gou left. My impression was the same as yesterday, but I could feel the umami and aroma through the nose, and there was none of the lack of flavor that I felt yesterday. It's delicious!
