Gorgeous aroma in the mouth. The aftertaste is light, refreshing and easy to drink. I also drank the other Shimane sake listed below, but this is my personal favorite. Shichikanma Junmai Ginjo-Nama Sake Tachiharu Asa Shibori Yamasan Masamune Inui Issen Special Junmai

Junmai Ginjo NO.901 Nama Sake The brewery just restarted in 2022 The aroma is mild but fruity. Refreshing aroma spreads and clears up nicely. Fruity but not too sweet, with a lingering bitter aftertaste that calls for the next sip or meal.

At Nishikawasan in Kado-Yakujin. It has a mild nigori (nigori rice wine) taste, a refreshing sweetness, and a light lactic acidity that makes it easy to drink as much as you want. We also enjoyed Ine Mangaka, Daimine Winter Visit, and Ame no Tsuki Daigin.

First Viridian. The aroma is lactic acidic. Clear acidity with no unnecessary cloying taste. Beautiful, with a slight acidity lingering in the aftertaste. I think this is the first time I've had such a beautiful sake. I'm not sure if it's really sake or not. The acidity is present but not too much, so it tastes great on its own or with a meal.

Fruity aroma like pear Shuwa shuwa feel, light sweetness and light acidity The lingering aftertaste is modest and really easy to drink. As the temperature rises a little, you can taste the minerality, which is also good. It is a really dangerous sake that can be drunk in large gulps and run out quickly! It has a versatility that can be matched with anything.

The aroma is subdued, perhaps because it has been chilled too long. When you put it in your mouth, you can feel the gasiness and acidity. It is not too sweet, so you can drink it without hesitation. Of course, I think it goes better with raw oysters than fried oysters. I think the minerality of oysters and the aftertaste of sake go well together.

Second bottle of Kaze no Mori I opened a bottle of Akitsuho 507 to feel the difference from Akitsuho 657 that I drank before. The aroma is mild. Moderate sweetness, with a lingering gassy and complex taste. Great as a food sake!

Purchased and opened the bottle immediately. The aroma is banana, the sweetness on the palate is moderate, acidity and bitterness come out and the finish is dry. A bit of minerality is left on the palate, leaving you wanting the next sip.

Found it in a supermarket on a business trip and bought it. Well carbonated Low alcohol at 12 degrees, with a sharp acidity and citrus bitterness. I want to cool it down and drink it in the summer.
