I finally opened a magnum bottle because I had to open the refrigerator in preparation for the new sake! Perhaps because it was left to rest, I feel that the acidity of the No. 6 yeast has been preserved, but the minerality has increased. The acidity is a little strong and sweet, and the minerality gives it a nice kick.
