If you drink it without nigori, you can feel the umami, acidity, bitterness, and astringency independently. When nigori is mixed in, the sweetness and umami of the rice brings them all together, which is delicious in its own way! I drank it over a period of four days and got the impression that the sweetness gradually became stronger. I was surprised that the gaseous sensation did not disappear. It is interesting to enjoy the various tastes depending on the time since the bottle was opened and the amount of nigori mixed in.

Sweet taste is stronger than Kabutomushi, but there is enough acidity and bitterness to make it a refreshing drink. On the first day, it was hard to feel sweetness while the temperature was low, but on the second day, sweetness was felt even right after taking out from the refrigerator. It is delicious, but I wonder if the 1,000 yen is the cost of the United Arrows logo...? I guess...? It is said that Kabutomushi (60% polished rice) is the base of the assemblage, but since the polishing ratio of Kuwagata is 90%, does it mean that the sweeter sake is 90% polished rice? What is the rule of the description of rice polishing ratio in assemblage?
