I think it has more sweetness and astringency than a regular junmai ginjo.
The acidity and bitterness from the sweetness and umami make it pleasantly sharp.
When I drank it over an unusually long period of time, I was surprised to find a balance like that of a grape on the 6th day!
It was very similar to the sweet-acid taste of the fruit, the bitterness near the skin, and the astringent taste.
