From the apple-like sweetness and acidity, the bitterness gives it a sharp edge, and the aroma comes back with a whiff.
I don't drink enough Tazake to make a comparison, but I don't remember Tazake being like this. It's more like a trendy sake.
I wonder if there is an experimental element because it is a summer sake...?
