Ingredients] Rice (100% Niigata Prefecture rice), Rice Koji (Niigata Prefecture rice) Rice produced in Niigata Prefecture Polishing ratio] 60 Alcohol content] Varies depending on the year of production. Sake meter】 【Acidity Acidity] 【Acidity】. Sake from Kashiwazaki, Niigata There is a record of 【Abe Genshu】of 2023/5, and I wanted to drink other standard sake. The other one was thicker, but this time it was clear! The moment you put it in your mouth, it has a slightly tangy, slightly fizzy feeling and a fruity aroma like melon. It has a sweetness that is not too strong, and it has a nice sharpness that doesn't leave a residue. It was very tasty!

Yu Kuromura The details are unknown, but it is said to be Junmai Daiginjo standard. I've had Murayu Kameguchitori for a while now and it was surprisingly sweet, but this one is even sweeter! I usually don't understand the word "fruity", but this one is fruity, so I guess it's really fruity! The taste in my mouth is a little bit sweet and apple or muscatel? Muscat? Sweetness and aroma like apple or muscat? And yet the aftertaste is refreshing. It's really delicious. But I don't know what to pair it with. I guess this is to be enjoyed by itself as a dessert.

It is easy to drink with a refreshing sweetness.

I don't know if it means this feeling of spiciness in the throat.

Junmai Minenohakubai Niigata Sake Alcohol: 15% abv. Rice polishing ratio: 65 One of a set of sake that I received from Niigata City's hometown tax payment. The impression is that it is not very distinctive and tastes light.

Snowy Matsushima Sea Hitomebore Mio was not enough for me, so I had another glass. It is said to be the first prize winner of some kind of Junmai sake. I think it is really easy to drink. But after Mio, I felt the smell of sake or alcohol was stronger than Mio. Mio is amazing! Next time, I will drink it for the first time.

Mio premium rich Lightly cloudy I bought this for my wife who has been busy with her work recently, as her big event is over. There is some sediment, but when I tipped it a little, it danced beautifully and made me feel special. I thought it would have a strong habit because it is nigori sake, but it is quintessential Mio! It has a banana-like aroma and sweetness, but it is easy to drink and refreshing! It is carbonated and you can drink it as if it were a juice. I was surprised that it is Junmai standard! I'm not sure if I would repeat it, but I thought it was a great sake! They served a prosciutto persimmon salad as a side dish!

Snowy Matsushima Junmai Ginjyo Nama Nama Sake 2 kinds The rice seems to be different, both "Kura-no-Hana" and "Gin-no-Iroha" produced in Miyagi Prefecture. The Gin-no-Iroha is more fluffy with a lingering aroma. Kura-no-Hana has a tingling aroma in the back of the nose, but it quickly disappeared. That said, both had a fruity aroma and were refreshingly delicious! I bought it at Yamaya, and from other people's postings, it seems to be a standard sake at Yamaya. It seems to have won some kind of award, but I didn't know what it was. I wonder if it's like a Monde Selection or something?

Haneya Junmai Ginjo Hiyoroshi Hiyoroshi" is a sake for autumn, isn't it? I'm a niwaka, so this is the first time I've heard of it. I like regular Haneya, but this one is easy to drink too! It has a refreshing sweetness and aroma, but it has a nice sharpness. It doesn't get in the way of food, so it goes well with anything. Since it is an autumn sake, we served it with pickled eggplant, which is in season.

Otters Junmai Daiginjo A long time ago, I thought it was sold at a huge premium and resold, but I wonder if it has become easier to obtain these days. I couldn't help but pick it up at a local liquor store because the price was around 1,700 yen for a four-pack! The rice flavor or sweetness is irresistible! Easy to drink! A definite sake! It's perfect for me, a meek person! If I see you again, I want to repeat!

Katsuma Junmai Daiginjo Probably the most famous sake in Toyama I submitted a Junmai sake in 2023/4 and was looking forward to the day when I could drink Junmai Daiginjo! Anyway, it is easy to drink! The aroma and taste disappear so quickly that they don't interfere with your meal! A little bitterness Delicious, but I have the impression that my expectations were too high. (I wrote the same thing about Junmai sake.) Considering the difficulty of obtaining it and the price, it may not be cosmetically pleasing. I wish it were easier to purchase, but I think it would be difficult to repeat.

Good evening, Maecin-san. Thank you very much for your frequent handsome comments. I also had not encountered Katsuma Jun Dai, so I took the plunge and bought it! My impression was just as you described, it was too good for my stupid tongue lol.

Chiyotsuru Cold Sake Chiyotsuru's summer-only sake recommended to be served cold Easy to drink I can't remember the difference because it's been quite a while since I drank the other standard, and I went back to my past posts, but all I found was a record of it being easy to drink. I liked the way the aroma lingered in my throat a bit. Will repeat.

Abe Genshu Slightly higher at 18% alcohol I'm usually not a fan of brewed sake and only choose junmai sake, but I was curious and bought this one. I noticed after I bought it that the label "Abe" in hiragana is standard, but this one is in kanji, which is a little unusual. The color is yellow. It has a thick mouthfeel and sweetness. It was described as whisky-like, but I don't have much experience with whisky, so I'm not sure what it is. My experience is that Polish mead is like this, but I wonder if aged liquors are like this. It was a unique taste! It made me want to drink a regular Abe!

Junmai Daiginjo-shu by Haneya Gohyakumangoku 50% polished rice ratio Comparison with Summer Ginjo I was surprised at the sweetness of the first sip, and was surprised at how different the taste was from that of the ginjo with only a 10% change in the rice polishing ratio, but after a few sips I couldn't really tell the difference! The aroma of this sake is also refreshing and spreads in the mouth, but it quickly fades away. The Daiginjo probably had stronger aroma and sweetness, I'm sure!

Haneya Sake Gohyakumangoku, 60% polished rice ratio Purchased to compare with the daiginjo mentioned below Although there may be a preconceived notion that this is a summer-only sake, it is just so refreshing and easy to drink! The sweet aroma spreads in the mouth at first, but it quickly fades away. I'm glad my wife enjoyed it. It tasted so good! I want to repeat it!

Katsumoma Junmai The day when I can finally drink Katsikoma has come! I bought it because I had accumulated points at Yoshida Liquor Shop, which I often visit (the system allows you to buy Katskoma according to your points). Some of the bottles on the Internet are priced around 10,000 yen, but here I was able to buy a four-pack for 1,500-1,600 yen! The moment you put it in your mouth, the aroma spreads, and the taste and aroma remain in the back of your nose and throat. I think it has a unique bitter taste. It was delicious, but I think my expectations were too high! Next time, I will save my points for Junmai Daiginjo!

Manrei Junmai Daiginjo Unfiltered Nama-zake ORIGARUMI Sake from Saga Very delicious! The color is a little yellow with sediment and suspended solids. I imagined it would have a complex taste because it is an unfiltered raw sake, but it is crisp, probably because it is a daiginjo. However, it was crisp and refreshing, perhaps because it is a daiginjo! The moment you put it in your mouth, it is delicious! What is "orikarami"? I asked Dr. Google to find out. I heard that it means to leave the "lees" as it is without the filtering process called "racking" (see: ). (Reference: https://tanoshiiosake.jp/10049) That makes sense that there is sediment. The taste is characterized by its richness. I heard that many of them are slightly sparkling, and the store where I bought this Manrei also described it as slightly sparkling, but I didn't understand it myself. I felt a little sparkle in the first glass when I just opened it, but I guess it was different if I imagined it was carbonated. At any rate, I am now one wiser! Thank you very much!
