Fine wine, we were allowed to taste it. They applied the production method of Madeira wine, a fortified wine from Portugal. By adding alcohol during fermentation, the fermentation is stopped and the sugar is left behind, resulting in a strong sweet taste. The wine is then heated and aged by the heat of the hot spring. It is amber in color and has a sour and sweet taste like dried fruit. Surprisingly, it is not too frizzy. It seems to go well with cheese and other strong flavors!

Daiginjo from the "Tasyu" brewery. Made from 100% carefully selected "Hundred and Fourteen (Hanasoui)" rice suitable for sake brewing. Released once a year. The bottle was opened at home. The elegant aroma spreads at first, and the mouth has a melon-like flavor. It finishes with a firm dry, refined taste. Impressive🥹.
