I opened the second bottle of Tobiroki, which I got at the end of February and let sit for 3 months.
It seems to have matured and become more crisp and to my liking than the first bottle. I think I like it better now.

I always thought Tosa sake was dry.
This is fruity and sweet. It is a gem of a sake.
And yet it is a gem with a mellow aroma of rice flavor.
At 14 degrees alcohol, it's especially good for women!

The mouthfeel is clean, yet the flavor of the rice can be fully appreciated.
It is clear with no gassiness and has a moderate sweetness.
It goes well with many dishes.

In a sense, I miss the fruity, unfiltered sake I've been drinking lately!
The aftertaste is light and refreshing even though it is a pure Yamahai junmai.

As the catch copy says, "Aizu Bijin" is the embodiment of the "bewitching" Aizu Bijin.
It is a bewitchingly fruity saké🍶, and the fizzy sensation when the cork is opened is irresistible.
I drank it alternately with Jikin Hachitan-Nishiki, and they were absolutely evenly matched.
Sake from Aizu is good 😎.

The first sip is delicious. The mellow aroma was not too assertive, but had an elegant ripe fruit flavor, and the gasiness of unfiltered freshness flowed through my mouth pleasantly. Toyo Bijin Junmai Ginjo, a reunion after a long time. The first sip was sweet. The first sip is so sweet that one wonders if it is sake, but the sweetness is elegant and the flavor spreads clearly. The slight fizzy sensation is the best part of orikara-mi, and the aftertaste is refreshing and light. The satisfaction of drinking this sake was considerable.
