Kuncho Sake Brewery in Hita was selected from the Oita Prefecture Sake Brewery Comparison Set. I had never heard of this sake brewery before. It is a dry sake with a hint of umami and a clean, easy-to-drink aftertaste.

I bought it at a supermarket when I stayed at a business hotel. I had never heard of this brand, but I was drawn to it because of its unpasteurized sake. It is a light sake, so naturally it has a refreshing taste.

Since it is called Junmai Super Dry, one would expect the alcohol content to be high, but it is only 15~16%. It has a refreshing taste, similar to Niigata's "light and dry" style.

I opened the second bottle of Tobiroki, which I got at the end of February and let sit for 3 months. It seems to have matured and become more crisp and to my liking than the first bottle. I think I like it better now.

I always thought Tosa sake was dry. This is fruity and sweet. It is a gem of a sake. And yet it is a gem with a mellow aroma of rice flavor. At 14 degrees alcohol, it's especially good for women! I like dry taste too 🤗. Thanks for the treat! Thank you 😎.

The mouthfeel is clean, yet the flavor of the rice can be fully appreciated. It is clear with no gassiness and has a moderate sweetness. It goes well with many dishes. Sea urchin, squid, konnyaku, cured ham, cheese, and dumplings. And even dumplings! Nice work! Kozaemon

The taste is in the realm of what should be called the royal road of sake. In a sense, I miss the fruity, unfiltered sake I've been drinking lately! The aftertaste is light and refreshing even though it is a pure Yamahai junmai. Sake is evolving, isn't it? Delicious. It's delicious 🤩.
