It's been a while since I've had a drink, and it seems like I've got an engine?
The third bottle was a bottle of Carrara Carrara by Clouds in the Mountains, which I had bought the label for!
As the name suggests, it captures the sound of the wind blowing down from the cold windy mountains of Kochi, I hear, and it captures my imagination even before I drink it 😋.
The aroma is sweet, with a hint of white peach. In the mouth, a light, fruity sweetness spreads first. What follows, however, is a crisp, sharp sharpness reminiscent of an empty wind and a slight bitterness. The sweetness does not linger on the tongue, but recedes quickly, making it very easy to drink.
There is not much of a sense of microbubbles, but the light spread after drinking is pleasant 😄.
This lightness makes it excellent as a food wine.
It has a gorgeous but clean aftertaste, so it does not interfere with the flavor of the food. It seems to be easy to match not only with Japanese food but also with Western food.
I was surprised at the high degree of perfection of this sake, which is produced by a new brewery.
