ginjo sake with no added alcohol
Sake that is a little sour but clean and literally goes well with fish. It is crisp and clean, and the taste does not interfere with raw fish such as sashimi, making it easy to drink.
At a sushi restaurant, I asked for something to go with uni (sea urchin) and was served it.
The sake was so clear and transparent that it went right in and the aftertaste faded out beautifully.
It went perfectly with the Nemuro Takahashi sea urchin.
It was an excellent sake that did not interfere with the meal.
Hou 50 Junmai Daiginjo Genshu
The fruity aroma of Yamadanishiki is followed by a deep sweetness and bitterness. The aftertaste is also long, with a soft taste of rice.
Round on the palate, but pretty crisp.
Not much sweetness, tingly and spicy at the end.
It had little flavor and was really dry. Literally a watery sake.
Slightly effervescent when opened. It is lightly cloudy, but quite refreshing. After pouring, you can feel a slight sweetness and umami in the back of the bottle. It would go well with chilled tomatoes or chilled tofu.
The flavor is more robust than the aroma when you drink it. Because of its depth, it seems to go well with slightly sweet foods such as miso rather than crispy foods. It also tastes good when heated.
It has a clear and refreshing aroma characteristic of Yamada-Nishiki, and is just easy to drink. The fruity aroma gives way to a clean umami flavor. The price is reasonable and cosy. No matter where you drink it, it was consistently delicious!
Juicy and shocking, like biting into a melon or some other fruit. The sweetness was felt at first and then disappeared quickly. It was a perfect taste that you could drink without any snacks.

Slightly effervescent. The aroma is quite fruity and sweet, and the sweetness lasts until the end. It also has a slight rice taste and a bitter taste at the end.
The bitterness from the sweetness that spreads gradually. It has a refreshing summery taste, though you can feel the slow and steady umami of the raw sake. You can also taste the sourness when the sake becomes lukewarm after a little time.
Yamadanishiki Junmai Sake
Sweet yet cohesive, goes well with any kind of rice. Perfect as a food sake.
We had it with hot bean curd, and it was delicious without being overpowered by the strong flavor.
Dry nigori
They say it is only available in Fukuoka.
It is nigori, so it is really mild on the palate!
It's quite dry and easy to drink, and you can feel the rice flavor at the end, so it goes down smoothly.
The bold flavor of Omachi is followed by a momentary sweetness that ends with a refreshing finish, followed by a significant bitterness.
The bitterness is like a tingle that lasts for a long time on the tongue.
You can taste the sweetness more when it is paired with stir-fried garlic.
The rice used and the degree of rice polishing are undisclosed.
The aroma is banana. It is said that a lot of malic acid is used, and a closer sniff reveals a fresh apple aroma at the end.
It has a strong acidity, but it is not unpleasant and can be drunk refreshingly.
It has the feel of sake made with wine yeast, but with just the right acidity and umami to balance it out.
It would go well with oysters, cream cheese, or anything else that would go well with wine.
It was the perfect sake for summer!

Junmai Daiginjo/Yumachi 50 Super-limited Orikarami Nama-no-Hara Sake
This is a local sake from Kangiku.
When the bottle was opened, the crown flew off. It has such a gaseous feeling when opened.
It has a cool and refreshing mouthfeel, and then the sweetness comes and quickly disappears. It is quite easy to drink.
It gives the impression of a sports drink.
Although it is made from 100% Omachi, it is delicate and has no peculiar taste.
I look forward to drinking it a little longer after opening!
It is so easy to drink and tastes so good that I am worried if I can keep it!
It seems to go well with refreshing food such as asazuke (lightly pickled vegetables).
Slightly effervescent when opened. Fruity and crisp. It has a refreshing summery taste. Made with 100% Mie Yamadanishiki, it was drinkable without any peculiarities.
Limited edition of 1200 bottles. The aroma is fruity. When drunk, it has a lingering sweetness that lingers for a long time. Although it is a draft sake, there is no bitterness, and the sweetness is followed by a clean finish. The sweetness is so strong that even if you drink it with oil, you can still taste the flavor.
