Sweet 2 Umami 2 Acid 1 Bitter 1 Aroma 2 I bought a bottle of Raku-fu-mai Shiboritate at the end of the year because of the snowman label. Unlike ordinary Izumihashi, it was fruity and easy to drink, and was well received by my family. The freshness and umami are exquisite, and the slightly lightness is compensated for by the turbidity. In a sense, it's a terrible sake that you can't stop drinking either as a food sake or on its own.
