Sweet 3, Umami 2, Acid 1, Bitter 2, Aroma 3 The taste is so fruity that you might think it is sweet. It is so fruity that you might think it is sweet, but it has a slight bitterness and is refreshing down the throat. It is a smooth and delicious sake for under 2000 yen. However, as a food sake, it is a bit overpowering.

Sweet 2 Umami 2 Acid 1 Bitter 1 Fragrance 2 If it is too cold, there is no aroma of sake at all. It is clean and free of miscellaneous flavors, but there is a strong sense of insufficiency. As a sake-within-a-sake, it would be better served with a 45, which is one rank lower.

Sweet 2 umami 2 sour 1 bitter 1 fragrant 2 A Junmai Ginjo from a series called "Aeon Exclusive", it feels a bit more like Jozen Josui, but with a slight sweetness on the palate. It's a little too unconventional to be a food sake.

2 sweet, 2 delicious, 3 bitter, 2 fragrant A dry taste that won't go away You can feel the spiciness every time you drink it, but it doesn't smell like it's going to go down your nose and it goes down your throat, so you can drink as much as you want when you're eating.

a2u2s1n1k3 This is a project in Hachioji and uses rice grown in Hachioji. When you put it in your mouth and roll it around on your tongue, you can feel the sweetness of the rice. It is a pity that the smell that permeates the nose is a traditional "sake smell" that is not typical of a ginjo.

a1u2s1n1k3 It's fizzy enough that the lid hits the ceiling when opened at room temperature. I can guzzle it with or without food. It's very similar to Sumiyama, also from Saga, but I prefer Sumiyama.
