This brewery is located in Minami-Awaji City, Hyogo Prefecture.
The rice is polished to 40% Yamadanishiki produced in Yoshikawa, Hyogo Prefecture.
Gentle and fresh aroma, soft
The aroma is gentle and fresh, the taste of rice is soft, and the finish is fresh and elegant.
#Japanese Sake
It is slightly amber in color. It has peach sweetness, caramel sweetness, a slight iron taste, a very moderate aroma of steamed cloth, cedar aroma, a richness brought about by layered aromas, a dryness that comes on slowly at the end, and an alcoholic aroma and apricot bitterness that leaves the nose. It has a complex presence.
A souvenir from my wife's trip to Awaji Island. The lightness that is typical of daiginjo-style sake, but the umami of the rice also remains. A well-balanced sake! Even without snacks, the glass goes down a treat (lol).

Fruity and easy to drink.
However, if it is 100% Yamada-Nishiki and 40% polished rice, it would be better to bring out the true flavor of the rice a little more.
I bought it at a roadside station to drink local sake when I was on a trip to Awaji Island.
Light green apple aroma.
When you drink it, the fruity aroma escapes into your nose.
The sweetness is gentle and umami.
It is light and has a delicious taste.
