This is a label for restaurants only. It's an Ikarashi Junmai-shu from Shinsei. It's modest but fragrant, and the sweetness of the rice is evident in the mouth. It has a crisp and clear taste in the mouth. It's as good as it gets. It is said that sake is made by a combination of rice production and farming. The brewers are involved in the production of the rice, and the sake is brewed by carefully polishing Gohyakumangoku, a type of rice suitable for sake production, and using their own yeast.
