Sake added to the series in 2022
Brewed with Fukuoka-grown rice called Jukinmu
Sweet and mellow aroma.
The rich sweet umami attack is quickly followed by acidity and bitterness, leaving a crisp, lingering finish.
Sakiyami's premium Junmai Daiginjo
Brewed with 35% polished Yamadanishiki rice
Fluffy and refreshing aroma.
It flows smoothly with a moderate sweetness and umami flavor.
I tried this one because of the white malted rice connection from Flax Cat.
This one has a milder acidity and is more balanced with umami and sweetness.
Pink in color for cherry blossom viewing when the cucumber is entwined
The aroma and taste are sweet and sour and easy to drink.
The alcohol content is 8%, so it's like a cocktail.
Kido's high-grade Muryozan series
Aroma is refreshing.
The lingering bitterness from the acidity and umami gives it a clean aftertaste.
However, this was also purchased from the same set as the Hana-yoku, and although it did not have a strong acidity, it was slightly yellowish, so it may not have tasted as it should have,
I bought a set of several bottles at an online flea market, but I missed the old manufacturing date💦.
But I thought if they were stored well... but when I opened them, they didn't have the usual gorgeous aroma.
On the palate, it tastes sour and not mellow sweetness 😭.
My friend who drank it with me said she could drink it like this if she didn't know it was Hana-yosu...
It was a good lesson for me that this kind of thing happens at flea markets!
I opened it slowly in the bathroom using an ice pick while freaking out about opening the bottle, and it didn't spurt out at all!
It's creamy, dry, and delicious!
I knew this before I got into sake and drank it many times at the store.
This is the first time I've ever had an "atamba kumi" sake!
Stylish appearance
Easy to drink with a good balance of umami and acidity
When opened, the bottle is popping with energy.
Fresh aroma like muscat.
In the mouth, it has an impressive freshness with a hint of chili gas, umami and acidity.
After a few days, the freshness settles down, but the elegant sweetness, umami, and acidity are very nice.
Acidity that is more pungent than tight.
A little acidic even for a white wine.
It was old and there was lees at the bottom, so that may have been a factor.
On the way back from my trip, I bought some sake at Sake Sento Horiichi and was told that I could play a "Gara-pon" game!
I turned it in, and to my surprise, I won and was told that I could buy a bottle of KahayoYoku!
As expected, the aroma was 🍍fruity!
Good balance of mellow sweetness and bitterness!
(I forgot to take a picture)
The bottle was opened when it was chilled to a crisp!
The aroma is mild.
It has a fresh acidity and umami flavor with a chili sensation and can be drunk neat.
This one is light nigori, and it's Aizan😍.
The first day I opened the bottle with high expectations, but the aroma and mouthfeel were so subdued that I wondered what was going on. The first day, the aroma and mouthfeel were so subdued that I was a bit surprised.
As the day went by, the aroma opened up and the sweetness with a touch of sourness came out!
Hello Koei-Kiku after a long time, this time Omachi!
I recently learned that you can distinguish clear sake and light nigori by the color of the crown!
This is a clear sake.
The aroma reminds me of a mellow and thick feeling!
The balance between the firm umami and sweetness of the rice and the acidity that is typical of Omachi is exquisite!
It has a great sense of this and that!
Koeikiku is the best 😊.
