Freshly squeezed and titled "Departure" as a "new start",
This bottle marks the beginning of the year for the OCEAN99 series! The motif is an airplane flying over the brewery on its way to the Pacific Ocean, and the aim was to create an exciting sake with the juicy freshness typical of new sake.
It has a wonderful balance of umami and sharpness.
Aizan" is a rare and popular sake rice grown by the Takagi Shuzo (brewer of the famous sake "Jyushidai"). We hope you enjoy its refined and fascinating originality along with its fresh taste. Please keep it in a refrigerator at a low temperature and serve it as soon as possible. I know, right?
The sake had a very clean taste typical of Junmai Daiginjo-style sake, with a refreshing sweetness.
UA Yukidaruma" is a sake inspired by "Yukidaruma," a popular winter-only sake produced by Senkin, which is rebranding itself based on the concept of "Edo-bouncing" in all aspects of rice cultivation, sake production, and regional development. Snowball" is characterized by a soft, slightly effervescent taste due to secondary fermentation in the bottle, and is an assemblage of several new types of sake made from a new concept of sake making using the traditional "sake brewing method" called "nama-hashiroshi". The silky, sizzling, gorgeous flavor is enveloped by a full-bodied sweetness. Please enjoy it with Japanese winter delicacies. I know, right?

The brewery uses 100% Yamada-Nishiki rice.
The rice is 100% Yamadanishiki. It is a Junmai Ginjo-shu orikarami, which is fermented at low temperatures for a long time and brewed with attention to the swelling sweetness and flavor of the Yamadanishiki. It is a Junmai Ginjo-shu brewed with a hint of sweetness and flavor.
It certainly has a good balance of sweetness and umami.
