Memorandum
This is a gem of a Daiginjo selected sake that has been aged in ice at -6℃ for about 2 years to express the exquisite kneading of both the ginjo aroma and the ginjo-style flavor. It's a gem that expresses the exquisite kneading of both ginkoku and ginjinshi.
As a sake lover and a whiskey/brandy lover, I found it to be an excellent sake.

Shichidarunijukan---This is an expression of the percentage of dribble and lees at the time of daiginjo-agefune, which has been handed down in our company from generation to generation, using the shakkan method, and means the yield of shizukusake in modern times. It means the yield of sake drops in modern times.
That's right, it's delicious.
[Memorandum].
I drank it in mid-December, so I forgot the detailed nuances.
However, if I see it again, I should buy it! I will leave this as a reminder to my future self.
We aim to create a sake that you will never get tired of drinking, based on the delicious taste of rice and acidity.
Abe" after a long absence
As stated on the label, it performs wonderfully as a food sake.
The bottle was opened at the beginning of home drinking.
It has a refreshing yet full flavor. Jikin has an excellent balance.
I thought I would be able to enjoy it for a few days because it was the first time in a while that I had a bottle of this size, but it ran out quickly.
I wonder when I can buy it again...
Freshly squeezed and titled "Departure" as a "new start",
This bottle marks the beginning of the year for the OCEAN99 series! The motif is an airplane flying over the brewery on its way to the Pacific Ocean, and the aim was to create an exciting sake with the juicy freshness typical of new sake.
It has a wonderful balance of umami and sharpness.
Aizan" is a rare and popular sake rice grown by the Takagi Shuzo (brewer of the famous sake "Jyushidai"). We hope you enjoy its refined and fascinating originality along with its fresh taste. Please keep it in a refrigerator at a low temperature and serve it as soon as possible. I know, right?
The sake had a very clean taste typical of Junmai Daiginjo-style sake, with a refreshing sweetness.
UA Yukidaruma" is a sake inspired by "Yukidaruma," a popular winter-only sake produced by Senkin, which is rebranding itself based on the concept of "Edo-bouncing" in all aspects of rice cultivation, sake production, and regional development. Snowball" is characterized by a soft, slightly effervescent taste due to secondary fermentation in the bottle, and is an assemblage of several new types of sake made from a new concept of sake making using the traditional "sake brewing method" called "nama-hashiroshi". The silky, sizzling, gorgeous flavor is enveloped by a full-bodied sweetness. Please enjoy it with Japanese winter delicacies. I know, right?
Tonight, we had it chibi-chibi with heshiko.
More casual than a snowman? More casual than a snowman? It was a UA snowman with a more casual or glamorous feel than a snowman.
It is delicious with adult calpis.
It is a winter activated nigori sake with beautifully dancing bubbles in the bottle, just like snow. Enjoy the fresh aroma reminiscent of muscat or melon, the milky acidity, and the deep umami from the rice, a harmony unique to winter. That's what it says.
Personally, it has a deep, fruity flavor that also has a banana feel.
Mimuro Sugi" has been brewed for over 360 years in Miwa, Nara, where the god of sake resides.
The brewery uses 100% Yamada-Nishiki rice.
The rice is 100% Yamadanishiki. It is a Junmai Ginjo-shu orikarami, which is fermented at low temperatures for a long time and brewed with attention to the swelling sweetness and flavor of the Yamadanishiki. It is a Junmai Ginjo-shu brewed with a hint of sweetness and flavor.
It certainly has a good balance of sweetness and umami.
If you are not careful, you will finish it in no time.
Edo Kairi.
Live today as seen from Edo,
Learn the new by warming the old. That's what they say.
To tell the truth, I was a little bit displeased with the acidity of Senkou's sake...but this one was really good.
But this one was really tasty.
Rather than a gaseous taste, it is now a carbonated beverage.
