I've never seen this brand before. It's mostly consumed in Niigata Prefecture, so it's not sold outside the prefecture. I was lucky enough to drink it 😄. It's chilled but very juicy, and it's a true trendy combination of sweetness and refreshment. I drank it at the end of a drinking party, so there wasn't much left of the knob, but it's a very powerful drink that works well on its own. I'd really like to taste it at home, so if I find it somewhere else, I'll definitely buy it 😙. But I drank too much yesterday 😨

I'm opening them all up because they are overstocked😅. I couldn't buy it last year and have been waiting for a year. The one I had at the Japanese sake festival was very subtle so I wanted to make sure 🤔. Fresh and fizzy. It has little sweetness, but the gasiness on top of the bitterness is very nice. I'd like to try the sake made with Kame-no-o that comes out around spring.

I bought it because a liquor store in my neighborhood started handling Tajima. I was surprised at how fruity it was. It is fresh, moderately sweet, and delicious. It is a more modern sake than I expected. After drinking this after the first time, it feels more like a sake 🤔.

This sake was tasted at the Kobe Hankyu event and made a good impression, and was highly praised by Nemuchi-san. A liquor store in my neighborhood became a special distributor, but I was wondering why they didn't carry this sake. Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑤. The booth of "Kaze no Sato" in Ehime. After suffering tremendous damage from the torrential rains in western Japan in 2018, the brewery decided to revive itself with the support of local people, fellow members of the sake brewers association, and volunteers. The brewery has recovered through crowdfunding and other means, and this one is also not to be found in the Kansai region. Junmai ◉ Junmai The aroma is a bit peculiar. It may be an off-flavor. The flavor is firm and a bit nutty. They say it is recommended to be heated. Junmai Ginjo Not too much sweetness and umami, but a mild acidity. Rice flavor and a bit of fruitiness. The taste itself is nice, but there is something strange about it... Kaze no Sato Junmai Ginjo Shizuku Ehime, Polishing ratio 50%, EK-3 yeast, Sake meter value +6 A juicy sake with a firm sweetness. A little pineapple 🍍. The most delicious 😋. Junmai Daiginjo Usu Yamadanishiki, Polishing ratio 40%, EK-1 yeast, Sake meter value +8 It was refreshing and gorgeous, but delicious! It had a berry-like flavor. All of the breweries here have high sake strength, but it didn't feel too spicy. ☀️ This is the first brand of sake from Ehime. There are glimpses of rice floating around 🌾. The ori is sturdy and doesn't seem to dissolve fully🤔. There is no sweetness and the rice flavor is more pronounced 🌾🌾🌾🌾🌾🌾. In addition to the nigori, the rice is dissolved to the point of being sludgy, but thanks to the microcarbonation, it passes down the throat better🫧🫧🫧🫧🫧. I took the opportunity to order a gibier that I don't usually eat called "ginger roasted wild boar🐗" and got the most delicious meat🥩 with a mix of the sweetness of the ginger, the flavor of the rice and the bitter after taste😋.
