This time, I brought out a sake from Hanazono Shuzo, a well-known sake brewery in Loman, to commemorate the 100th anniversary of the company's founding.
I bought this sake a while ago, but never had a chance to drink it.
Since it comes in a box, it has been blocking my refrigerator for quite a while, so I opened it up.
I took a sip of it cold.
Well, it is made with 33% polished rice, so it has a beautiful flavor with no cloying taste at all, but since I drank Akabu no Kohaku before this, it seemed ordinary to me. (^_^;)
Then, I tried it hot and drank it.
Yes, it is very dry.
It is delicious with strong flavored food.
My wife does not seem to like this kind of flavor, so she drank two or three cups and that was it... (^_^;)

Hanaizumi Shuzo is a well-known sake brewery in Loman. Fukushima has a long history of being Japan's number one sake brewery in terms of gold medals won at sake competitions, and there are many high-level breweries in the prefecture. This time, it is a fully matured sake (not a common word) with a sweetness that is made by letting the raw sake sit for a year. The sake brewer's effort is appreciated!
The sake is bottled directly from the vat, so if you drink it early in the season, you can enjoy the freshness of the sake.
The taste is quite tasty, with a good acidity and umami, and a slight bitterness in the aftertaste. The sweetness is firm, but the slight bitterness in the aftertaste gives it a grape-like quality.
It may be a good match for a strong beef stew, as it has a robust flavor. It is also quite good on the rocks.

It is a delicious sake with a freshness and the mellowness and density of nigori can be lightly tasted.

Thankfully, there are many sake that have a wonderful harmony of sweetness and umami, but this Hanaizumi is really interesting to drink because of the way the sweetness and umami spread out at the same time. The sweetness is light on the tongue, and at the same time, the umami spreads from the throat to the entire mouth at a very fast pace. This sweetness and umami are neither light nor cloying, but just right. I don't think you can find this sake very often outside of Fukushima Prefecture, and this acquisition was quite a coincidence, but I think it is a sake that should be sold more often.

I just wandered over to Gonoi's online store and saw it there,
I added a few other things to the list and clicked 😆.
This one! It's delicious!
It looks quite white, but it doesn't feel sludgy.
It's surprisingly easy to drink 🎶.
It's not highly carbonated, but has just the right amount of pizzazz.
Personally, I don't like the sizzle in my sake, but I loved this one!
