We ordered one half gou of Hakugakusen, which is our favorite sake, and also Natsumushi, which we had not had enough of when we drank at home.
But when the bottle of sake came out, it was "Umimatsu" 🤪 We had an unopened bottle of "Natsumushi" waiting for us at home, so we drank it for the first time 😅 I think I like "Natsumushi" more than "Hakugakusen".

Hakudakesen Gin-no-sato Jyuwari-brewed Aged Junmai Daiginjo GAKU
The second high-end model of Hakugakusen, which was newly released at the end of last year. I was aiming for the original "Miku Raichi", but I got this one, saving it for the next time.

Aroma of mellow rice with a slight herbaceous accent, clear mouthfeel with a slightly juicy umami, beautifully acidic finish, and a deep and pleasant aftertaste as if you are peering into an abyss.

A bottle that can be drunk with a meal, but is best enjoyed simply with sake.
After finishing the first saké, you will feel a sense of relaxation as if you are relaxed after drinking the soothing water.

The wrapping of the sake is made of "Habutae" (a traditional Japanese wrapping cloth) with Fukui Castle, which is associated with Lord Shungetake, painted on the wrapping.
The stone wall of Fukui Castle is the foundation of the current Fukui Prefectural Office ✨.

This is a dangerous sake that is dry but has a beautiful acidity and excellent sharpness that makes it easy to enjoy. Ihyakumangoku. With sausage & kraut
Hakudakesen summer sake! I wanted to drink Natsumushi and Misora, but they were all sold out?
When you drink it, the characteristic acidity of Hakudakesen, which cannot be described as fruity, comes forward, and it is cut with a sense of minerality! Not too sweet.
It has a nice body as it is a pure sake, and it cuts through the oil from the meal, so I noticed that I had lost quite a bit of it! It is delicious!
If it had a gusty flavor, it would be popular with everyone, but it has a core that is not modern, but still brews an elegant and delicious sake.

Hi Gyve 🌞 I've never visited the brewery before! I see that there is a possibility that there is quite a bit of seasonal sake at the brewery. I'd love to go at some point 😌.
It is still a dry and refreshing summer sake, but has a wonderful aroma unique to junmai ginjo. 100% Gohyakumangoku from Fukui Prefecture is used. Polishing ratio is 55% for koji rice, 58% for kake rice, and 15% alcohol by volume.

I bought a bottle of Sakurazumi in spring at the brewery and it was so delicious that I checked out a distributor in Hyogo and bought it 😀 It has a little more gasiness than Sakurazumi.
It is a little more gaseous than Sakurazumi, with a sweet taste at the beginning but it is sharp and dry at the end, also very tasty 😋.
I don't like gaseous or sweet tastes, but for some reason I'm into Hakugakusen 🤣.
I would love to try the recently released "Umimatsu" 😋.
