Bought this sake on a trip to Fukui. There was a lineup of junmai, junmai ginjo, and junmai daiginjo, and this was recommended to me. I liked the aroma and the unexpected acidity when cold, and thought it might be too acidic when heated, but it turned out to be the best when cooled. A good sake that makes you want to eat snacks. The staff at the store was very friendly and helpful.

Hakugakusen Junmai Ginjo Umimatsu
The aroma is more mild and refreshing than Natsumushi, the taste is gentle, the acidity is more robust than Natsumushi, and it finishes with a sour aftertaste and a bitter taste at the back of the throat.
We were able to compare the Hakugakusen summer sake, which we have not been able to do every year 🥰.

Hakugakusen Junmai Ginjo Natsumushi Nama Shu!
The aroma is a little refreshing with a summery flavor, and the mouthfeel is clean and tart with a refreshing aftertaste.
[I had it in a glass supervised by Hakugakusen, and I wanted to have it to capture the nuance of the aroma, but it's a bit expensive, so I'm not sure what to do 🤔.
I drank it outside before opening the bottle at home 😅.
I bought a bottle because I really liked the previous summer sake "Natsumushi", but as I felt when I drank it outside, it left a little bit of sweetness, so even though they are summer sake from the same brewery, they are quite different 🤣.
It was also a good experience to feel the difference of summer sake from the same brewery 😁.

This one is a straight, straight-forward, light, dry sake from the middle of the line 🙆♂️
I have the impression that there are many light and dry sake in Fukui, even in Hokuriku.
