When I mentioned in a comment on Gyve's 500 check-in that I had never had it and would like to try it, Gyve told me that he recommended the crimson raw sake for the current season, and I immediately checked several stores. Then, I found a store less than 30 minutes away by bicycle that had "the first shipment of this season" in their stock list, so I went to buy it right away and got it! (Maybe this is correct 😅)

You can tell the bottles of Hakugakusen by the black bottle, which is fire-aged, and the clear bottle, which is nama-zake 😁.

I found the red label, so of course I ordered it 😁.
It's a sake 🍶.
It is a solid dry sake with a core of umami 😎.
The subtle piquancy is well accented and you can smell the scent of the ginjo because there is almost no sweetness 😚.
I felt a hint of sweetness when I paired it with salted grilled chicken 🤗.
It was a royal dry sake with depth of flavor during the meal 🍶.

You can feel the sweetness of the rice and a very light acidity, and it finishes quickly (I was drinking sweet and sour earlier, so maybe it's a little different).

The taste of mellow rice and sweetness, the mouthfeel is gentle, but the sweetness and umami are firm, and then it finishes with a gorgeous lingering sweetness that is typical of Hakugakusen and a refreshing acidity.

Mr. Gyve always raises delicious reviews and once I wanted to drink Hakugaku Sen🍶 Arasugi will be released in time for the Echizen Crab ban.
The aroma is sour, rummy.
When you include it, you get a firm sense of chili and arabesque. Then grapefruit-like bitter acidity, followed by the aroma and umami of rice in the back, and a lingering aftertaste that lingers slowly after swallowing.
Delicious! There was no crab, but I paired it with seafood, including scallops from Betsukai and lobsters that I got that day.
The next day, the apple flavor was very sweet. It was delicious, yet refreshing and made me want to drink it again and again. It is a combination of modern and classic.
As time goes by and the chilli becomes a little less, you can taste more of the citrus and muscat-like acidity.
The acidity on the tongue and the flavor on the swallow. Honey at the back? It also has a richness like honey in the back.
I enjoyed it, thinking that sake from a place where seafood is delicious goes perfectly with seafood.
