It wasn't too hard to open the bottle.
Sake rice is Aomori grown, 55% koji rice, 69% kake rice.
The alcohol content is 13%.
The aroma is cemedine-like.
The taste has a firm and refreshing acidity.
There is a little bit of sweetness and a little bit of rice flavor.
There is a bitter aftertaste from the mid-palate, so it is a nigori sake.

I'm posting in order the sakes I got at Nihonshu Tsubaki, which I was able to visit for the first time this year on Saturday, July 8 (now...).
I didn't take note of the details of the food that was served with the pairings, so I'm only going to post pictures 🙏.

We started with a cup of amazake as an aperitif before this sake 🍶.

This sake is from the Hachinohe Sake Brewery of Mutsu Hachisen!

The pairing was something like Aji no Namenro 😅.
Koji rice and Kake rice produced in Aomori Prefecture
Polishing ratio: Koji rice 55%, Kake rice 69
Alcohol content 13%.

Sweet but refreshing and easy to drink
When poured into a glass, it has a sweet aroma.
The lees are not fine but rough, just like doburoku.
When you put it in your mouth, the carbonic acid fizz stimulates the inside of your mouth with a tingling sensation.
It is sweet, but the carbonation makes it dry and refreshing, and the aftertaste is refreshing.

The very opening of the bottle is cautioned.
I shook the bottle slowly before opening it to mix the whole bottle, but when I opened it, every time I turned the cork, the liquor came out shrieking. LOL!

I'm not a fan of carbonated drinks, so this is a strong carbonation.
But the sake flavor was strong and tasted good enough even after the carbonation was gone.

After the opening ceremony, I poured it into a glass and found that it was not quite a beer, but it had bubbles like cola.
The top aroma is modest, but it has a fruity sweet aroma like Mutsu Hachisen and a slight malted rice aroma.
In the mouth, there is a refreshing sweetness and a bitter, sharp taste accompanied by a carbonic acidity.
It also has a cool, refreshing overtone that somewhat resembles that of ramune.
This is delicious!
I think it is my favorite nigori so far.
