I got this sake at a sake bar owned by a brewery I stopped by on a trip to Kanazawa.
It was very nice, with a gentle sweetness and a refreshing taste, like a lactic acid bacteria drink for adults.
The tofu served as a snack was a specialty of Ishikawa, and it had a creamy texture that was very unlike tofu. The tofu marinated in miso, which was served as a snack, had a creamy texture that was hard to believe it was tofu.
