It's delicious, like ginjo-shu!

I had an image that most of the Yamahai sake had acidity, but this one had a strong taste but was not habitual, so it was delicious!
I had a purple labeled Kaze Buki before, which was very good, so I want to drink it again!
A year-old Shiboritate. After a year's aging, the corners are removed and it becomes a big hit. This year's Shiboritate will be laid down again for next year.
Nice to meet you. I like this sake because it is unexpectedly different from the usual Shimehari-zuru, but I didn't know there was such a way to drink it! Sounds interesting & delicious.
It retains the junmai-like flavor, but the coarseness is reduced and the umami is increased. It is difficult for it to keep occupying space in the refrigerator, though (lol).
Please give it a try!
