JohanbtokyoCloudy and bubbly - beautiful to look at. Taste is light and refreshing. Slightly acidic and sweet, but balanced. Worked well as a dinner aperitif in the midst of the Golden Week holidays. 3.50/5
JohanbtokyoDenshu Kojonishiki Junmaidaiginjo from Nishida Shuzo in Aomori prefecture. Brewed with the extremely rare rice variety Kojonishiki, revived and grown by the brewery itself. Rich taste of sweet muscat grapes. Followed by a refreshing acidity. The Denshu’esque umami backbone there as well. Dangerously clean aftertaste. 4.50/5
JohanbtokyoFizzy on the tongue. Juicy. Strong acidity. Citrus and apple flavors. Four days after opening the fizziness is gone, the flavors intensify and it becomes even more juicy. I like most of the stuff from Koueigiku but this one is a favorite. 4.50/5
JohanbtokyoDry. Really nice white-koji-esque acidity. Hints of grapefruit and orange. Tiny hint of sweetness (very tiny hint). Flavors open up a week after opening. Nice. good warm as well. 4.25/5
JohanbtokyoSmells like onsen. Taste is very acidic. Hint of salt. Hint of smoke. Unusual. Long finish. I kind of like it in small amounts. Warmed up hot. Will let this continue age in the wardrobe and see how it develops. 3.50/5
JohanbtokyoRestrained aroma. Taste is sweetness and umami in good balance. The yamahai version seems slightly richer than the regular tokubetsu junmai? Slightly longer aftertaste. But still refreshing, light feeling. Works well drinking on its own. Great chilled. I tried warming it up but I would not recommend that. 4.25/5
